Ingredients of Butterfly Chicken

  • 800 gms boneless chicken cut into small pieces
  • 3 medium potatoes thinly sliced
  • 2 eggs, whisked
  • 2 tbsp Ginger Garlic paste
  • 2 tsp vinegar
  • 1 tsp red chilli powder
  • 1 tsp chaat masala
  • 1 ½ tsp soy sauce
  • 1 tbsp red chilli paste
  • Black salt (as per taste levels)
  • Salt (as per taste levels)
  • 1 tbsp Black pepper
  • 2 tbsp lemon juice
  • 3 tbsp corn flour
  • 3 tbsp all-purpose flour (maida)
  • Sesame seeds
  • Oil for frying

How to Make Butterfly Chicken

In a big bowl, take chicken pieces and marinate them with ginger garlic paste and spices – red chilli powder, chaat, salt, and pepper. To this, add eggs, soy sauce, red chilli sauce, red chilli paste, vinegar, corn flour and maida. Mix it well with the chicken pieces so that they are well coated. Cover the bowl with a lid and keep it aside for 3-4 hours to marinate.

In the meantime, slice medium-sized potatoes into thin layers and rinse them. Now take two tablespoons of corn flour and add water to it to make it slurry. Add the sliced potato pieces to the corn flour slurry and let it soak for 10 minutes.

After the potato slices have been soaked, take them out. Now take one slice, gently place the marinated chicken in between, fold it and keep it together by inserting a toothpick in between.

Repeat the same process with other chicken pieces and potato slices. Make sure the toothpick holds the meat and vegetables properly and does not just pierce them.

In a frying pan, heat some oil or ghee on a high flame. After the oil has become hot, reduce the flame and gently place the butterfly chicken in it. Deep fry the butterfly chicken until it’s crisp to perfection. Garnish with sesame seeds and voila! Your butterfly chicken is ready to serve!
