Ingredients of Carrot and Cashew Coleslaw

  • 1 large grated carrot
  • 1 finely chopped onion
  • 2 chopped celery sticks
  • 250 gm grapes
  • 250 gm lichees - peeled and stoned
  • 1/2 cabbage - shredded
  • 1 Tbsp chopped parsley
  • 4 Tbsp sesame oil
  • 1/2 tsp poppy seeds
  • 1/4 tsp yellow mustard seeds
  • 1 Tbsp vinegar
  • 1 Tbsp apple juice
  • Salt and pepper
  • 50 gm roasted cashew nuts chopped
  • Herbs to garnish

How to Make Carrot and Cashew Coleslaw

  • 1.Combine fruit and vegetables.
  • 2.Stir in parsley. Heat oil.
  • 3.Add poppy and mustard seeds. Cool.
  • 4.Add vinegar and apple juice to oil. Mix and pour over coleslaw.
  • 5.Garnish with nuts and herbs. Serve cold.
