Ingredients of Carrot and Cashew Coleslaw
- 1 large grated carrot
- 1 finely chopped onion
- 2 chopped celery sticks
- 250 gm grapes
- 250 gm lichees - peeled and stoned
- 1/2 cabbage - shredded
- 1 Tbsp chopped parsley
- 4 Tbsp sesame oil
- 1/2 tsp poppy seeds
- 1/4 tsp yellow mustard seeds
- 1 Tbsp vinegar
- 1 Tbsp apple juice
- Salt and pepper
- 50 gm roasted cashew nuts chopped
- Herbs to garnish

Combine fruit and vegetables.
Stir in parsley. Heat oil.
Add poppy and mustard seeds. Cool.
Add vinegar and apple juice to oil. Mix and pour over coleslaw.
