Ingredients of Coconut poli
- 250 gms jaggery
- 250 gram fresh coconut, grated
- 1 tsp cardamoms powder
- 1/4 tsp nutmeg powder
- For The Poli -Outer Covering
- 300 gram whole wheat flour
- 5 tbsp oil or ghee (clarified butter)
- 5-6 tbsp beetroot puree
- 1 tsp Haldi powder
- 1 tbsp spinach puree
- water as required to knead the dough

Preparing coconut stuffing

In a pressure cooker, cook the soaked chana dal for 6 to 7 whistles. The dal must be cooked well, then strain the cooked dal.

Heat ghee in a pan on a low flame, add jaggery, and grated fresh coconut. Sauté a bit and let the jaggery melt completely, then add ground nutmeg powder, ground cardamom powder. Fry for a few seconds on a low heat. Keep it aside, let it cool.
Preparing The Poli Dough

Meanwhile take whole wheat flour - Add a little bit of water and ghee and mix. Begin to knead the dough adding water as required.

The dough should be smooth and soft. Divide the dough in 3 parts, mix one part with beetroot puree, mix 2nd part with haldi powder, and 3rd part with spinach puree. Cover and keep aside the dough.
Making coconut Poli
1.
Take a small size ball from all three dough which you had prepared. All three colour dough -put together in a layered form (don’t mix to form one dough). Roll it 2 to 3 inches in circumference on a banana leaf. Place a portion of coconut mixture in the centre of the rolled dough.

Bring the edges together towards the centre. Join all the edges and pinch them and roll it like a

On a medium heated tawa, spread some ghee. Place the rolled poli/dough circle on the tawa. When one side gets browned, turn over and cook the other side. Apply ghee.

Stack them in a casserole or in a kitchen napkin.

You can serve coconut poli with ghee.
