Paal Poli is an authentic South Indian dessert made with deep fried semolina puri soaked in sweet saffron milk.

Ingredients of Paal Poli
- 1 Cup Maida
- 1/2 cup Suji (semolina)
- 1/2 cup Sugar
- 500 ml Milk
- 10-15 Saffron threads
- 1/2 tsp Cardamom powdder
- 1/4 cup Almonds
- 1/4 cup Cashew Nuts

First, mix maida, suji, half of your sugar, a pinch of salt, some water and knead a soft dough.
Let this dough rest for at least 10 mins.
In a pan boil milk and let it thicken, after a while add saffron threads and sugar and simmer for another 5 mins. Sprinkle the cardamom powder and once that is properly dissolved, remove it off the heat.
Prepare the dry fruits mixture by coarsely grinding the almond and cashew and sugar. Keep this aside for later.
Now, take your dough and roll tiny balls out of it, make tiny puris and fry them.
Dip all of your fried puris in the flavoured milk.
Plate the dessert by placing puris, pouring the flavoured milk on top and garnishing with the dry fruits mixture.
