How to Make Vedmi /Gujarati Puran Poli
Vedmi /Gujarati Puran Poli : Vedmi is the Gujarati version of puran poli, a traditional Maharashtrian sweet flatbread. Unlike its cousin, vedmi is typically made using tur dal and not chana dal. This delicacy is especially enjoyed during Holi, Gudi Padwa, Diwali and other festivals.

Ingredients of Vedmi /Gujarati Puran Poli
- 2 Cups whole wheat flour
- 1 tbsp oil
- 2 cups water
- 1 cup Tur dal
- 1 cup jaggery
- 1/4 tsp elaichi/ cardamom powder
- 1/4 tsp nutmeg powder (optional)
- 6 soaked saffron strands (optional)
- A pinch of salt
- 3 tbsp ghee

Wash 1 cup of tur dal well and then soak for 30-40 minutes in warm water. Drain the water and add the dal to a pressure cooker.

Add around 2 cups of water to the cooker, mix with the dal and close it. On medium heat, cook the dal for 3-4 whistles until cooked.

Later, in a pan on medium flame, add the cooked dal and jaggery. Stir to melt the jaggery and combine it with the dal. Mash the dal to form a smooth mixture.

Once the mixture begins to dry up, add cardamom, nutmeg powder and saffron. Continue stirring to thicken the paste. Once done, allow the mixture to cool.

In a separate bowl, combine the flour and oil to form a dough. Add water as required and knead well. Cover the dough and set aside for 20 minutes.

Later, make small balls of the dough and roll each of them like a chapati. Add a little bit of the sweet filling in the centre.

Fold the circular dough in half and seal the edges. Roll over it again to spread the filling around (but do not apply too much pressure).

Cook the vedmi on a tawa on medium flame with ghee on either side. Wait till it turns golden/ light brown on each side.

Serve hot with a drizzle of ghee on top.
