Ingredients of Cream Of Spinach Soup
- 1 Onion, finely chopped
- 2 tbsp Butter
- 2 cup Fresh spinach, chopped
- 3 medium Potatoes (½ kg), peeled and cut into 1-inch cubes
- 1 and a half cup Chicken or vegetable broth
- 1 and a half cup Water
- 2 Chicken or vegetable bouillon cubes
- 2 Half and half
- 1/2 tsp Salt
- 1/8 tsp Black Pepper
- 3/4 Sour cream
- A pinch of Ground all-spice
- 3/4 cup Chopped chives for garnish
How to Make Cream Of Spinach Soup

Take a large saucepan and place over medium heat, add butter, add the chopped onions to the pan and sauté for 4 minutes or until translucent.

Now add the potatoes, chicken broth, water, and bouillon cubes. Bring the mixture to a boil, now reduce the heat to low, cover, and simmer for 20 minutes or until the potatoes are tender. Add spinach and cook for 2 to 4 minutes, until spinach is tender.

Purée the soup mixture in a blender and return the mixture to the saucepan.

Over low heat whisk while adding salt, pepper and sour cream until fully incorporated.

Garnish with chopped chives, sprinkles of allspice, or a dollop of sour cream and serve.
