Ingredients of Creamy Rosso Penne

  • 140 gm Penne
  • 5 gm Garlic, sliced
  • 2 gm Small red chilli, finely sliced
  • 7 ml Oil
  • 30 gm Roasted mushrooms
  • 140 gm Cooked passata
  • 30 ml Veg stock
  • 50 gm Fresh cream
  • 15 gm Black olives
  • 15 gm Slow roasted tomato
  • 5 ml Extra virgin olive oil
  • 3 gm Parmesan
  • 1 gm Torn basil
  • 1 Garlic butter ciabatta toasted

How to Make Creamy Rosso Penne

Gently fry the chilli and garlic in oil for around 20 seconds. Add the tomato sauce, mushrooms & half of olives, slow roasted tomato, and bring to the boil, add fresh cream, and mix well, add seasoning.

In the meantime refresh penne pasta. Toss the pasta with the sauce until nicely coated, add some cooking water if too dry.

Plate nicely, try to spread the pasta instead of making a big pile.

Garnish with remaining olives and slow roasted tomato, grated parmesan, basil leaves and extra virgin olive oil. Serve garlic butter toasted ciabatta.
