Ingredients of Croiffle
- For the culture:
- 750 g Wheat flour
- 750 g Yeast, instant
- 38 ml Water
- For the dough:
- 1.5 kg Wheat flour
- 225 g Castor sugar
- 112 g Unsalted butter (82% fat)
- 225 g Eggs, whole and fresh
- 337 ml Water
- 52.5 g Table salt
- 1 kg Butter sheets (82% fat)
How to Make Croiffle

Mixing – Should be done on low speed for 5 mins and medium speed for 5 mins. Final dough temperature - 24°C.

Fermentation - 2 hrs 15mins at 27°C. Oven Temperature - 200°C. Baking time - 12 mins.
Method:

Put the filling enclosed between the 2 sheets of pastry/ waffle dough. Put the dough on a waffle machine for desired texture.

Please note, the cavity of the waffle machine and the length & breadth of the croissant dough remains the same for this process.

Cut the dough and place it inside a cookie cutter of about 5 mm. Proof and bake with the egg wash on top of it.
