Curried Scallops

Scallops served with a curry cream on a crisp potato wafer and tangy keri.

Ingredients of Curried Scallops

  • 12 scallops
  • 2 tsp turmeric powder
  • 2 Tbsp jaggery (gur)
  • 2 tsp cumin
  • 1 tsp mace
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1 tsp black peppercorns
  • 1 tsp coriander seeds
  • 2 tsp chilli powder
  • 3 tsp salt
  • 6 shallots
  • 5 Tbsp butter
  • 1 bunch fresh basil
  • 2 tsp garlic
  • 6 Tbsp malt vinegar
  • 1 cup double cream
  • 3 medium potatoes
  • 1/2 cup refined flour (maida)
  • 1/2 cup bread crumbs
  • 2 raw mangoes (keri)
  • 1 cup oil
  • 1 tsp red chilli flakes
  • Juice of 2 lemons
  • 1 orange juice
  • 1 Tbsp sugar

How to Make Curried Scallops

Make a spice mix with all the dry spices. Coat onto the shallots.

Cook the shallots with butter and basil.

Take juices left in pan and work into a fry of shallots, garlic and malt vinegar with heavy spices from the spice mixture. Work the cream at the end. Sieve the cream to make sure there are no bits in it.

Grate the potato and make a mix of refined flour and bread crumbs. Dip potatoes in this mixture, deep fry in oil till golden.

Slice the keri finely and saute in a pan with some oil, red chilli flakes, lemon juice, orange

juice and sugar.
7.
Serve with a layer of scallops, cream and the fritters.
