Insalata Di Pollo is a classic Italian salad recipe. A low fat recipe with boiled chicken.
Ingredients of Insalata Di Pollo
For the chicken:
1 White onion
1 Whole chicken
1 1/2 tsp Salt
For the salad:
1/2 Green bell pepper (white part removed), sliced
1/2 Red bell pepper (white part removed), sliced
1/2 Yellow bell pepper (white part removed)
4-5 Salad leaves, finely chopped
1/4 Iceberg lettuce
1 Tomato, sliced
For the dressing:
1/2 tsp Salt
1/2 Lemon (juiced)
1 tbsp Olive oil
A pinch of Pepper
How to Make Insalata Di Pollo
1.Boil the chicken for a couple of minutes along with the carrot, onion, celery and salt.
2.Let it cook for about 1 - 1 1/12 hours.
3.For more flavor cook the chicken with the skin on to keep the moisture in. Remove the skin after cooking to reduce fat.
4.Scrape off the meat from the chicken. Here the chef uses meat only from the chicken legs as it is more juicy and flavorsome.
5.In a bowl mix all veggies and salad leaves.
6.Add to this shredded chicken.
7.Mix all the dressing ingredients well.
8.Mix in the veggies, chicken and dressing.
9.Garnish with some fresh pepper and olive oil.
