Rolled in with seasoning mixture, boiled rice is shaped into small balls, coated with peanuts and deep fried.

Ingredients of Peanut Rice Cakes

  • 1 tsp crushed garlic
  • 1 tsp crushed ginger
  • 1/2 tsp turmeric
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1 tsp chilli sauce
  • 2 tsp soya sauce
  • 2 Tbsp chopped coriander
  • 1/2 tsp lemon juice
  • Oil for frying
  • 100 gm boiled rice
  • 4 Tbsp raw peanuts

How to Make Peanut Rice Cakes

  • 1.Combine garlic, ginger, turmeric, sugar, salt, sauces, coriander and lemon juice.
  • 2.Stir in 75 gm of the rice and pound until smooth.
  • 3.Stir in the remaining rice.
  • 4.Shape small balls out of the rice mixture and coat with chopped peanuts.
  • 5.Deep fry the rice balls until crisp and golden.
