Ingredients of Rajasthani Mogar Ki Sabzi

  • 1 Cup moong dal
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp jeera
  • 1 tsp haldi
  • 1 tsp red chilli powder
  • A pinch of hing
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 2-3 green chillies, chopped
  • 1-inch ginger, grated
  • 2-3 garlic cloves, minced
  • 1 tomato, chopped
  • 2 tsp lemon juice
  • Salt, to taste
  • Coriander leaves, for garnish
  • Water, as required

How to Make Rajasthani Mogar Ki Sabzi

Start by washing the moong dal nicely. Soak it in water for a while. Transfer to a pressure cooker along with water and cook for 3 to 4 whistles.
Now, heat some oil in a pan and add jeera, mustard seeds, and hing. Once the seeds start to crackle, add all the dry masalas. Saute well.
Next, we need to add the chopped ginger, green chilies, and garlic. Give it a nice mix before adding the tomatoes.
Once the tomatoes are cooked, it’s time to add the moong dal to the pan. Mix well and cook for a few minutes.
Finally, add the salt and a dash of lemon juice for a kick of flavour. Top it with fresh coriander leaves and serve hot with roti.
