1.
Take sooji in a bowl. Add curd and mix. Now, slowly add water to the mix. Don’t add too much, as we want a slightly thick batter. Keep the batter aside and let it rest for 10 minutes.
2.
Add all the vegetables to the mix, along with salt, green chilli and ginger-garlic paste. Adjust water if required.
3.
Prepare the tempering for the uttapam by heating oil and adding mustard seeds (optional) and curry leaves in a pan. Let it sputter, then remove from heat and mix into the same bowl.
4.
Finally, add fruit salt and briskly mix the uttapam batter. Keep it aside for a minute.
5.
Heat a non-stick tawa or uttapam griddle. Remember to grease it with a little bit of oil.
6.
Pour batter onto the tawa in small batches. Flatten it using the spatula and let it cook on medium-low heat for 4-5 minutes.
7.
Once the uttapam starts to brown, flip it over and cook on the other side. Remove from heat once both sides are cooked and serve with chutney of choice!
