Ingredients of Restaurant-Style Xo Chicken Fried Rice
- 1 Cups cooked rice
- 200 gram Shredded Chicken
- 2-3 eggs
- 3 tbsp vegetable oil or sesame oil
- 2 tbsp soy sauce
- 3-4 tbsp XO sauce
- 1 onion
- 5 Garlic cloves
- 2 inches of ginger
- 1 tsp sugar
- to taste Salt
- Spring onions (for garnish)

In a wok over medium heat, add 1 tbsp of oil and scramble the eggs until almost done. Remove the scrambled eggs from the wok and set them aside for later.

Add the remaining oil to the wok and add the diced ginger, garlic and onions. Stir them lightly until the onions are light brown.

Add the shredded chicken pieces. Stir fry them carefully but don’t wait for them to cook completely before adding the rice.

Next, add the rice to the wok. If it is freshly cooked, allow it to cool before you begin making this dish. If you are using leftover rice, remember to remove any big lumps.

Add the soy sauce, salt and sugar while continuing to stir-fry the ingredients.

Then, add the XO sauce and mix it well into the wok.

Finally, add the scrambled eggs and continue to stir fry lightly.

You can add a little bit more XO sauce if you want a stronger flavour.

Sprinkle some spring onions on top and serve hot.
