Ingredients of Roast Pumpkin, Maple Ginger Glaze, Crispy Rice
- 1 Kg Pumpkin
- 50 ml Olive oil
- to taste Salt
- 10 gram Coriander seeds (crushed)
- 5 gram Cumin, roasted
- 5 gram Black pepper (crushed)
- 15 gram Ginger, chopped
- 30 gram Salted butter
- 100 ml Pure maple syrup from Canada
- 1 Lemon
- 50 gram Rice puffs
- 3 gram Coriander , chopped

Deseed and cut pumpkin in to 1 inch dices.
Dress the pumpkin with olive oil, salt, black pepper, crushed coriander seeds and roasted cumin.
Roast the pumpkin in the oven at 180 degree celsius for about 20-25 minutes.
Heat butter in a saucepan, when the butter starts browning slightly, add the maple syrup and ginger. cook for 1-2 minutes or till saucy consistency.
Now add the roasted pumpkin and toss. Cook for another minute.
Check the seasoning, add salt and pepper if required and finish with lemon juice and chopped coriander.
Garnish with crispy rice puffs and serve.
