In a bowl, mix sooji and yogurt to form the cheela batter. Make sure the batter is consistent, thick and a little coarse.
Now, add the vegetables and mix again. Make sure the vegetables are thinly chopped or diced so that the batter does not become heavy. Add a little water if required.
Mix in the ginger-garlic paste, green chilli, red chilli powder and salt. Sprinkle a pinch of coriander leaves and let the batter rest for 15-20 minutes.
Now, heat a non-stick tawa and brush it lightly with oil. Once the oil starts to sputter, spread the batter evenly on the tawa.
When the cheela turns white from the top and starts to lift off the tawa, gently flip it and cook on the other side. Keep pressing so that it cooks evenly.
Remove from the tawa and serve with green chutney or any other dip of choice.
