A little sweet, a little spicy. This potato curry recipe tantalizes your taste buds with its different flavors. Fried baby potatoes doused in a creamy and rich saffron, mango and yogurt gravy.

Ingredients of Sweet and Sour Potato Curry

  • 4 Tbsp oil
  • 1/4 tsp ajwain
  • 3 cloves
  • 3 split green cardamoms
  • 2 ground onions
  • 1/2 tsp ginger paste
  • 1 tsp garlic paste
  • 1/4 turmeric powder
  • 1/2 tsp mild chilli powder
  • Salt, to taste
  • 1/2 kg small potatoes, boiled, peeled and fried
  • 150 ml whipped yoghurt
  • 2 tsp melon seeds-roasted and ground
  • 75 ml ripe mango pulp
  • 2 Tbsp cream
  • 1/4 tsp saffron strands-soaked in 1 Tbsp water
  • 4 split green chillies
  • 1/2 tsp garam masala
  • Juice of 1 lemon

How to Make Sweet and Sour Potato Curry

Heat oil. Add ajwain, cloves, green cardamoms followed by onion paste. Fry until colored.

Stir in ginger, garlic, turmeric and chilli powder. Season with salt.

Add the potatoes. Pour in the yoghurt and melon seeds. Stir and cook for 3-4 minutes.

Stir in mango pulp, cream, soaked saffron, chillies, garam masala and lemon juice. Serve immediately.
