Ingredients of Thengai Poli
- 2 Cups whole wheat flour
- A pinch of salt
- Water (as needed)
- For stuffing:
- 200 gms coconut
- 100 gms jaggery (powdered)
- 1 tsp cardamom powder
- 1 tsp ghee

Make a smooth dough by combining flour, water and salt. Let it rest for about an hour.
Meanwhile, prepare the stuffing by heating ghee in a wok. Add coconut, cardamom and jaggery to it. Stir until the moisture is absorbed and the mixture has come together. Let it cool for some time.
Now take the rested dough, divide into equal portions, make medium-sized balls and flatten it like chapatis.
Take a portion of sweet coconut stuffing and place it in the centre of flour portion. Bring the edges of the circle together and fold it. Seal it well.
Now flatten the poli again, do not press too much or the mixture will come out.
Now heat a griddle and cook the polis until golden brown from both the sides. Repeat the process with all other divided portions and serve hot topped with ghee or butter.
