Ingredients of Tradition Hot Cross Easter Buns
- 375 gm all-purpose flour
- 32 gm castor sugar
- 6 gm salt
- 8 gm yeast
- 6 gm cinnamon powder
- 5 gm nutmeg
- 28 gm butter soft
- 183 gm warm milk
- 1 no eggs
- 86 gm raisins & black current
- For the cross paste:
- 65 gm all -purpose flour
- 90 gm water
- 46 gm icing sugar
- For glaze:
- 32 gm icing sugar
- 32 gm water

In a bowl, combine the flour, sugar, salt, yeast, spices, warm milk, butter, and eggs. Mix everything together until it forms a soft dough, kneading for about 6 to 8 minutes. Then add the raisins and black currants and mix until evenly incorporated

Keep the dough in a bowl and let it rest for 45 minutes.

Divide the portions into sizes ranging from 35 g to 55 g, and let them rest for 40 to 50 minutes

Mix the flour, water and icing sugar together to make a paste thick then you have to make piping the paste in the buns like + mark.

Pre-heat the oven at 190c and bake it for 24 minutes until golden brown colour.

Take one saucepan and heat the sugar & water until dissolved and then brash it on the buns.
