The much-awaited festival of colours is next week and we are eagerly looking forward to it. Holi is also the best time to gorge on decadent sweets like gujiyas, laddoos, puran poli and many more. While the domain of 'Holi colours' is not usually the kitchen, we thought to introduce the theme into the food - with a twist! Thus, we have come up with a special recipe for a colourful sweet: Rangeela Barfi. This barfi is sure to brighten up your plates and impress your guests. Besides being very simple to make, it is also quite delicious and easy to customise to your liking. What more could you ask for? Here's how you can make it at home:

How To Make Rangeela Barfi | Recipe for Special Colourful Barfi

What you need:

This recipe uses basic ingredients like sugar, ghee, milk, milk powder, cardamom powder and food colouring. You can add other flavours and even dry fruits as you wish. Some versions of this barfi include maida and khoya for extra thickness, but you can get similar results without using them too.

How to prepare the barfi:

  • In a pan, mix melted ghee, milk and milk powder. Remember to keep stirring the mixture so that lumps don't form.
  • Dissolve sugar into the mixture and stir. Once the mixture begins to leave the pan, add the cardamom powder and mix well. Turn off the heat and transfer the mixture carefully into a bowl.
  • Divide the mixture into 4 separate bowls (or as many colours as you wish) and mix in the food colouring in all but one bowl (this can be used as white colour).
  • Grease a tray with tall sides, a cake pan or a similar container. Spread the mixture from the first bowl on the tray with a spatula, but not too thinly. Next, spread the mixture from the second bowl on top of the first layer. Continue until all layers have been created.
  • Cut the layered shape into small squares and transfer each to the serving plate. Shave almonds on top as a garnish.
