It is Rajasthani papad ki sabzi.

Papad ki sabzi is a staple dish in Rajasthani households. This regional delicacy is made using fried papads that are simmered in a flavourful curd-based gravy. The curd helps in thickening the gravy and gives it smooth texture. Rajasthani Papad Ki Sabzi Recipe: How To Make Rajasthani Papad Ki Sabzi
To make this sabzi, heat oil in a kadhai and deep-fry the papad. Keep aside. Now, in another kadhai, heat ghee and saute the cumin seeds. Add ginger-garlic paste and stir till it becomes light brown in colour.
To this, add haldi, coriander powder, red chilli powder, chopped green chillies and ginger. Allow it to cook till the oil separates from the masala. Now, pour curd in the masala and stir well. Add water and bring the gravy to a boil. Let it become thick in consistency.
Break the fried papad into small pieces and add them to the gravy. Mix well. Add salt and allow it to cook for 4-5 minutes. Garnish with fresh coriander leaves and serve hot! Rajasthani papad ki sabzi is ready!
