Here's the step-by-step recipe of karela bhurji -
Ingredients -
(Serving - 2)
4 bitter gourds
2 onions, chopped
2 tomatoes, chopped,
1 green chilli, chopped
1 tbsp ginger-garlic paste
Half tsp cumin seeds
Half tsp turmeric powder
1 tsp coriander powder
Salt to taste
Red chilli powder to taste
A pinch of asafoetida
1 tsp lemon juice
Coriander leaves for garnishing
Method -
Step 1 - Wash and dry the bitter gourd. Grate or finely chop it. Add about half teaspoon of salt, mix well and keep aside for 5-10 minutes. This process helps tone down the bitterness of the vegetable.
Step 2 - Saute asafoetida and cumin seeds in oil. Then, saute onions, green chilli and ginger-garlic paste till onions change colour to pink, not brown.
Step 3 - Add grated bitter gourd and saute along with the onions for 5-6 minutes.
Step 4 - Add tomatoes, salt, red chili powder and coriander powder and let them cook. (Remember, there is already some amount of salt in the bitter gourd.)
Step 5 - Add lemon juice and garnish with coriander leaves before serving.
