What Is Baida Roti?
Baida roti is a special type of paratha stuffed with chicken/mutton keema (mince) and egg. Many versions of this dish exist, and its exact origins are unclear. Baida roti is often enjoyed as part of iftar meals. It is also a popular street food in Mumbai. This particular recipe gives the regular baida roti a twist by adding a layer of cheese to it. If you want to take simple keema to the next level, then you have to try this dish.

How To Make Cheese Baida Roti At Home | Quick And Easy Recipe For Chicken Cheese Baida Roti
Make a soft dough by mixing maida, salt, oil/ghee and milk. Add water at intervals. Knead well and allow the dough to rest, covered. In the meanwhile, start preparing the stuffing. Wash, drain and boil raw keema with some water. Stir a few times and cook until dried. Now, in a kadhai, heat oil and add ginger garlic paste, green chillies and chopped onions. Saute until translucent. Add the cooked mince and ensure the heat is now on low flame. Add salt to taste along with spices such as cumin powder, turmeric powder, garam masala, etc. Combine the masalas well with other ingredients.
Add lemon juice, chopped coriander and mint leaves. Cover the vessel for 2 minutes. Turn off the heat and allow the filling to become slightly cool. Whip eggs with a little salt and nutmeg powder. Set aside. Next, break off pieces of the dough prepared earlier and flatten them using a rolling pin (like you do with rotis/ parathas). In the centre of each roti, place a cheese slice and top it with the keema stuffing. You can add more chopped onions or green chillies if you wish to. Spoon a good quantity of the beaten eggs on top of the filling. Bring the edges of the roti together to form an envelope-like shape. Seal the edges well using more of the egg mixture as required.
Heat oil in a tawa. Place the roti on it and then add some of the egg mixture on top. Flip and add the egg mixture on the other side too. Continue flipping until both sides turn golden brown. Cut it into triangles and serve hot with mint chutney.
