Bhindi, okra or lady finger, call it what you want, but one thing remains constant: people's fondness for the vegetable. It's is one of the most popular vegetables in Indian households, and is made in a variety of ways. Okra is also one of the most versatile vegetables in Indian kitchens. Although we usually like to enjoy it as a part of the main course, many people cook it a bit differently and use it as a snack as well. So, you don't always have to stick to the regular style of cooking bhindi.
Chef Saransh Goila shared a lip-smacking kurkuri bhindi chaat recipe on Instagram. The best part of the recipe is that you do not have to deep-fry the bhindi here.

Ingredients:
Bhindi (slit from the center) - 200 grams
Amchur powder - 1 tablespoon
Chilli powder - 1 tablespoon
Coriander powder - 1 tablespoon
Salt to taste
Jeera powder - 1 tablespoon
Ajwain - 1 tablespoon
Besan - 1 1/2 tablespoons
Rice flour - 1 1/2 tablespoons
Water - 1 1/2 tablespoons
Ice cubes - 4-6
Thick yogurt - 1.5 cup
Black salt - 1 tablespoon
Sugar - 2 tablespoons
Chaat masala - 1/2 tablespoon
Mustard oil
For chaat dressing:
Imli chutney
Green chutney
Curd
Pomegranate seeds
Sev

How to make kurkuri bhindi chaat?
1) First, slit each bhindi from the center and keep them all in a bowl. Start adding spices one after the other. Add dry mango powder, chilli powder, coriander powder, salt, jeera powder and ajwain. Then add besan (gram flour), rice flour and a little bit of water and mix well.
2) Air fry the bhindis for 20 minutes at 180. This is how you can eliminate the process of frying them entirely. Smear some mustard oil on the okra.
3) Prepare the curd mix. Take ice cubes, thick yogurt, black salt, jeera powder, sugar, chaat masala, and salt and whisk it well. Keep it aside.
4) The kurkuri bhindi is ready. Now, you have got to garnish it with some quintessential chaat items. Place the bhindis on a plate and garnish it with curd (you prepared), imli chutney, green chutney, pomegranate seeds and sev.
