For the unversed, litti chokha is the most iconic food in Bihari cuisine. In fact, it won't be an exaggeration to say that the dish defines the food culture of the state. Litti is an atta dough with spiced sattu stuffing, roasted/grilled to perfection. It is then dipped in desi ghee and served with chokha (mashed potato and aubergine), onion and chutney. The combination of dry litti and moist chokha with spicy chutney leaves a burst of flavours on the palate. In fact, the very earthy flavour of the platter instantly tugs at heartstrings. And the best part is, the dish is oil-free, grilled and super healthy for daily consumption. The use of atta, sattu, ghee and vegetable load the delicacy with essential nutrients.
