Now's the time to say "Cheese" For The ClassicBrie: This is a variety of soft milk cheese named after the French region from where it originates. It has a slight gray tinge. Emmenthal or Swiss cheese: It's a yellowish hued, medium-hard cheese, which originated from Emmental, Switzerland. Parmigiano-Reggiano or Parmesan cheese: This is a hard, granular cheese, which is named after the producing areas in Italy near Parma, Reggio Emilia, Modena and Bologna. The cheese is made from raw cow's milk and it is cooked, not pressed. (In picture above)
