Peel and wash the potatoes. Grate them using the side of the grater with the larger holes.
Soak the grated potatoes in 2 cups of water. Add ½ tsp haldi and 1 tsp salt to the water. Soak for 5 minutes.
In a large mixing bowl, add the onions and green chillies. Gently crush them with your hands.
Squeeze the water out of the grated potatoes. Take care not to mash it while doing so. Add them to the onion mixture.
Add chilli powder, coriander powder, ajwain seeds, garlic, sugar, coriander leaves and rice flour to the bowl.
Lastly, add the besan little by little. Continue mixing the ingredients as you do so.
Add 1 tbsp oil to this mixture and combine well. Keep aside for 5 minutes.
Deep fry small portions of the mixture until golden brown and crisp. Serve the pakoras hot with green chutney and/or ketchup.
