Bacon and Tomato Casserole Recipe

A delicately baked dish of bacon and macaroni topped with tangy tomato puree. Casserole is a French dish which in British English is frequently also called a bake.

Ingredients of Bacon and Tomato Casserole
- 200 gm macaroni
- 1 clove garlic- chopped
- 30 gm butter
- 6 rashers bacon
- 8 large tomatoes-ripe
- 1 tsp corn flour
- Salt and pepper
- 1 medium onion
- Pinch of sugar
- 50 gm grated cheese
- 1 bouquet garni- mixed herbs

Cook the macaroni. Keep aside.

Cut the tomatoes and crush them with a wooden spoon in a thick saucepan.

Add the finely sliced onion, garlic and the bouquet garni.

Simmer gently for a few minutes until it turns soft.

Sieve this puree.

Mix the corn flour with the melted butter and add to the puree; return to the saucepan and simmer for 15 minutes.

Season with salt, pepper and a pinch of sugar.

Now fry the diced bacon until just crisp.
9.
Mix together the sauce, fried bacon and cooked macaroni and place in a casserole.
10.
Sprinkle grated cheese on top and heat through in the oven for 5-10 minutes.
