Start by cutting the potatoes and tomatoes into roughly chopped cubes. Now, mix red chilli powder and haldi with some water to make a paste.
Heat oil in a pan and add the potatoes. Fry them until they turn golden brown in colour. In the same pan, add the chana (cottage cheese) and fry it too.
In the remaining oil, add dried red chilies, bay leaves, and cumin seeds. Saute for a minute or two, and then add the chopped tomatoes.
Now, add ginger-garlic paste, cumin powder, and the prepared red chilli powder and haldi paste. Mix well and add sugar, salt, and water. Cook until the oil starts to separate from the mixture.
Next, add the fried potatoes and chana to the mixture, cover the pan with a lid, and cook on a medium flame for 10–15 minutes. Finally, add garam masala and ghee to the gravy and give it a nice mix. Bengali chanar dalna is ready to be relished!
