Ingredients of Chicken Involtini

  • 1 whole chicken (brined)
  • 50 g chopped parsley

How to Make Chicken Involtini

Remove the skin of the chicken without tearing it. Debone the breasts and the thighs. Mince the thighs.

Butterfly and hammer both the breasts. Spread skin of the chicken then breasts over cling-film in a rectangular shape.

Spread the parsley on top of it. Add the minced thigh in a shape of log on top and roll it tightly.
4.
Cook the roulade in the sous vide on 70°c for 2hrs 30min. Sear on a high heat and portion. Serve hot with truffle sauce and greens.
