A refreshing treat for the season with coconut water, strawberry, goose berry and blue berries blended together and combined with honey, orange juice and the tangy bit of lime.

Ingredients of Coconut and Berry Gazpacho

  • 200 Gram Strawberries
  • 200 Gram Gooseberry
  • 200 Gram Blue berries
  • 20 Gram Honey
  • 180 Ml Orange juice
  • 30 Gram Cucumber, chopped
  • 20 Ml Lemon juice
  • 5 Gram Mint leaves
  • 500 Ml Tender coconut water
  • 10 Ml Extra virgin olive oil (for drizzling)
  • To taste Salt and pepper (crushed)

How to Make Coconut and Berry Gazpacho

  • 1.In a blender, combine the berries, cucumber and tender coconut water.
  • 2.Puree until smooth.
  • 3.Add lemon juice, orange juice, mint and honey; blend to combine.
  • 4.Season with salt and pepper.
  • 5.Serve chilled, garnished with chives, berries.
