Ingredients of Coconut and Berry Gazpacho
- 200 Gram Strawberries
 - 200 gram Gooseberry
 - 200 gram Blue berries
 - 20 gram Honey
 - 180 ml Orange juice
 - 30 gram Cucumber, chopped
 - 20 ml Lemon juice
 - 5 gram Mint leaves
 - 500 ml Tender coconut water
 - 10 ml Extra virgin olive oil (for drizzling)
 - to taste Salt and pepper (crushed)
 
How to Make Coconut and Berry Gazpacho

In a blender, combine the berries, cucumber and tender coconut water.

Puree until smooth.

Add lemon juice, orange juice, mint and honey; blend to combine.
4.
Season with salt and pepper.
5.
Serve chilled, garnished with chives, berries.
