Ingredients of Mixed Veg Coconut Gravy
- 1 Cup coconut milk
- 2 cups mixed vegetables (carrot, green peas, cauliflower, French beans, potato, etc.)
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp turmeric powder
- 1 tsp chilli powder
- 1 tsp garam masala powder
- 2 tbsp tamarind pulp/ tomato puree
- 1 onion, finely chopped
- 2-3 green chillies, slit
- 1 sprig of curry leaves
- 1 tbsp ginger garlic paste
- 1/2 tsp mustard seeds
- Salt to taste
- 2 tbsp oil
- Coriander leaves for garnish

Clean, chop and parboil the mixed vegetables. Set aside to cool.
In a kadhai, heat oil and add mustard seeds. Once they splutter, add the curry leaves, slit green chillies, ginger garlic paste and chopped onion.
Once the onion changes colour, add the spice powder (except garam masala) listed above. Saute for a minute.
Next, add the boiled veggies and mix well.
Pour in the coconut milk. Stir and add salt along with tamarind pulp.
Cover and cook on low flame for 10 minutes.
Sprinkle garam masala, garnish with chopped coriander leaves and serve hot.
