Ingredients of Fish Skewers with Coriander and Red Wine Vinegar Dressing

  • 200 Gram Sea bass fillets
  • 1 Tbsp Olive oil (for grilling)
  • 20 Ml Red wine vinegar
  • 2 Tbsp Sugar
  • 1 Tbsp Extra virgin olive oil
  • 1 Garlic clove, chopped
  • 1 Tbsp Coriander, chopped
  • Bamboo skewers

How to Make Fish Skewers with Coriander and Red Wine Vinegar Dressing

  • 1.Soak bamboo skewers in water.
  • 2.Cut fillet of fish into inch thick cubes and skewer them into the bamboo skewers- about 4 cubes per stick.
  • 3.Salt the fish skewers and grill them or sear them on a very hot pan with olive oil till done.
  • 4.In a mixing bowl pour in the red wine vinegar, sugar, extra virgin olive oil, chopped garlic and coriander along with some salt.
  • 5.Whisk the dressing till the oil and the vinegar begin to get cloudy and till the sugar melts.
  • 6.Plate the fish skewers and pour the dressing on top. Serve with a refreshing salad.
