Ingredients of Guava and Cottage Cheese Salad
- 12-14 rocket (arugula) leaves
- to taste Salt and pepper
- 1 tsp olive oil
- 1 large apple (diced)
- 1 large guava (diced)
- 1 small cucumber (cut in half lengthwise and sliced), peeled
- 2 tbsp crumbled cottage cheese (paneer)
- 1 tbsp alfalfa sprouts (You can use moong dal sprouts)
- For the dressing:
- 2 Dates (pulp extracted), boiled
- 2 tsp jaggery, grated
- 2 tsp tamarind pulp
- to taste Black salt

Wash and pat the rocket leaves dry. Refrigerate till chilled.
In a mixing bowl, toss the chilled rocket leaves with salt, pepper and olive oil. Arrange on a serving plate.
Place the prepared apple, guava, cucumber, cottage cheese and alfalfa sprouts on top of the leaves.
For the dressing:
In a small mixing bowl, combine the date pulp with jaggery, tamarind pulp and black salt and stir the jaggery till it dissolves.
Drizzle the dressing over the salad and serve chilled.
