Ingredients of Guava and Cottage Cheese Salad

  • 12-14 rocket (arugula) leaves
  • to taste Salt and pepper
  • 1 tsp olive oil
  • 1 large apple (diced)
  • 1 large guava (diced)
  • 1 small cucumber (cut in half lengthwise and sliced), peeled
  • 2 tbsp crumbled cottage cheese (paneer)
  • 1 tbsp alfalfa sprouts (You can use moong dal sprouts)
  • For the dressing:
  • 2 Dates (pulp extracted), boiled
  • 2 tsp jaggery, grated
  • 2 tsp tamarind pulp
  • to taste Black salt

How to Make Guava and Cottage Cheese Salad

Wash and pat the rocket leaves dry. Refrigerate till chilled.

In a mixing bowl, toss the chilled rocket leaves with salt, pepper and olive oil. Arrange on a serving plate.

Place the prepared apple, guava, cucumber, cottage cheese and alfalfa sprouts on top of the leaves.

For the dressing:

In a small mixing bowl, combine the date pulp with jaggery, tamarind pulp and black salt and stir the jaggery till it dissolves.
2.
Drizzle the dressing over the salad and serve chilled.
