Guava and Cottage Cheese Salad

An electric mix of rocket leaves, apples, guavas and paneer. This salad is drizzled with a date, tamarind and jaggery dressing.

Ingredients of Guava and Cottage Cheese Salad

  • 12 to 14 rocket (arugula) leaves
  • Salt and pepper, to taste
  • 1 tsp olive oil
  • 1 large apple, diced
  • 1 large guava, diced
  • 1 small cucumber, peeled, cut in half lengthwise and sliced
  • 2 Tbsp crumbled cottage cheese (Paneer)
  • 1 Tbsp alfalfa sprouts (You can use moong dal sprouts)
  • For the dressing:
  • 3 dates, boiled and pulp extracted
  • 2 tsp grated jaggery
  • 2 tsp tamarind pulp
  • Black salt, to taste

How to Make Guava and Cottage Cheese Salad

  • 1.Wash and pat the rocket leaves dry. Refrigerate till chilled.
  • 2.In a mixing bowl, toss the chilled rocket leaves with salt, pepper and olive oil. Arrange on a serving plate.
  • 3.Place the prepared apple, guava, cucumber, cottage cheese and alfalfa sprouts on top of the leaves.
  • For the dressing:
  • 1.In a small mixing bowl, combine the date pulp with jaggery, tamarind pulp and black salt and stir the jaggery till it dissolves.
  • 2.Drizzle the dressing over the salad and serve chilled.
