This palatable pickle of green chillies is stuffed with a spice mix and generous squeeze of lime.

Ingredients of Hari Mirch Ka Achaar

  • 1 kg large green peppers-washed and wiped dry
  • 4 cups lemon juice
  • 3/4 cup salt
  • 3/4 cup fennel seeds-powdered coarsely
  • 3/4 cup powdered mustard seeds
  • 1/2 cup turmeric
  • 2 Tbsp onion seeds
  • 1/4 cup fenugreek seeds - roasted and powdered fine
  • 1 Tbsp asafoetida - roasted and powdered fine
  • 1 cup vegetable oil

How to Make Hari Mirch Ka Achaar

  1. Slit the peppers lengthwise.
  2. Mix together 3/4 cup salt, fennel seeds, mustard seeds, turmeric, onion seeds, fenugreek seeds and asafoetida.
  3. Mix in 1/4 cup each of the lemon juice and the oil too.
  4. Fill the peppers with the spice mixture and pack them into a clean jar.
  5. Pour the rest of the lemon juice over the peppers and leave thus for 3-4 days.
  6. Heat the rest of the oil, cool it to room temperature and pour into the jar after 3-4 days.
  7. Keep it covered with oil, to prevent it from spoiling.
