About Healthy Club Sandwich Recipe: A perfect tea time snack. Vegetarian option: sandwich with wasabi sauce, lettuce, zucchini and mozzarella. Non-vegetarian option: smoked turkey breast and egg white omelete. Served with a tasty cucumber, balsamic vinegar and goats cheese salad.

Ingredients of Healthy Club Sandwich

  • 3 slices whole wheat bread - toasted
  • 1/2 tomato - cut into thin slices
  • 1 tsp wasabi spread (light mayonnaise mixed with wasabi)
  • 1-2 iceberg lettuce leaves - soaked in ice water
  • 3 slices mozzarella cheese - smoked
  • 1/4 cup bell-pepper and zucchini - diced, roasted and de-skined
  • For the non-vegetarian sandwich:
  • 1 slice turkey breast - smoked
  • 1 egg white omelette
  • For the salad:
  • 1/2 tsp red wine vinegar or balsamic vinegar
  • 1/2 tsp flavored olive oil
  • 1/2 cucumber diced
  • 1-2 capers
  • 1 tsp goats cheese
  • 1/2 tsp black pepper

How to Make Healthy Club Sandwich

  • 1.Spread all the slices of bread with wasabi-spread.
  • 2.Cover the first slice of bread with tomato and lettuce leaves.
  • 3.Add the second slice of bread and top it up with smoked cheese and roasted vegetables.
  • 4.For the non-vegetarian add turkey breast and egg white omelette as well.
  • 5.Cover with the third slice of bread, secure the sandwich with wooden picks and slice it in half.
  • 6.Salad:
  • 7.To prepare the dressing, take a bowl and mix red wine, vinegar and flavored olive oil.
  • 8.Add pepper, lettuce leaves, capers and cucumber.
  • 9.Mix well, garnish with goat cheese and serve with the sandwich.
