Mango Curry

A lovely Indian curry made with yogurt, mango, gram flour, and jaggery.

Ingredients of Mango Curry

  • 450 ml mango pulp
  • 3 Tbsp gram flour
  • 150 ml water
  • 5 Tbsp whipped curd
  • 1/2 tsp ginger powder
  • P inch of asafoetida
  • 2 green chillies
  • 2 tsp ginger paste
  • 1 Tbsp oil
  • 1 tsp cumin seeds
  • 10-12 curry leaves
  • 2 tsp grated jaggery

How to Make Mango Curry

  • 1.1. Strain mango pulp.
  • 2.2. Place gram flour into a bowl. Add water. Stir until smooth.
  • 3.3. Place mango, curd and flour paste in a pan.
  • 4.4. Pour in 300 ml water and add ginger powder and asafoetida.
  • 5.5. Grind chillies with ginger, add to the mixture. Season.
  • 6.6. Cook until thick, for about fifteen minutes.
  • 7.7. Heat oil, toss in cumin, followed by curry leaves.
  • 8.8. Stir and fry for 6-7 seconds.
  • 9.9. Add to the mango mixture.
  • 10.10. Simmer for 10-15 minutes.
  • 11.11. Stir in the sugar and serve.
