Ingredients of Mile High Chocolate Pastry

  • For Layering:
  • 900gm Chocolate Sponge
  • 670gm Dark Chocolate Cream
  • 550gm Light Chocolate Cream
  • 150ml Sugar Syrup
  • For Dark Chocolate Cream:
  • 300gm Dark Chocolate Truffle
  • 50gm Whipped Cream
  • For Light Chocolate Cream:
  • 300gm Dark Chocolate Truffle
  • 300gm Whipped Cream
  • To Garnish:
  • 20gm Chocolate Sponge Crumbs

How to Make Mile High Chocolate Pastry

First, make six sheets of chocolate sponge. (Each 900 gm after baking and trimming).
Take first sheet of chocolate sponge, sprinkle sugar syrup (100 gm). Apply dark chocolate cream (670 Gm). Spread it.
Place the second layer sponge, sprinkle sugar syrup (150 gm). Apply light chocolate cream (550 gms). Spread it.
Repeat dark chocolate cream in 3rd and 5th layer.
Repeat the light chocolate cream in the 4th and top layer. Set the cake in the refrigerator.
Cut the cake in length wise and apply light chocolate cream on the sides. Sprinkle chocolate crumbs on the top and sides. Mile high chocolate pastry is ready! Tip: Add less sugar syrup in the bottom and second layer.
