A delightful dessert, pears poached in a saffron and spice syrup, flavored with rose water.

Ingredients of Pears in Saffron and Rose Syrup
- 6 pears-peeled and left whole
- 400 ml water
- 200 gm sugar
- 2 lemon rinds
- 4 cloves
- 1 blade mace
- 6 small split cardamoms
- 1-2 Tbsp Rose water
- 1/2 tsp roasted saffron strands
- 1 Tbsp blanched split roasted almonds
- 6 small mint leaves silver leaf (optional)

Mix water, sugar, rind and spice into a pan and cook over gentle flame.
Boil for five minutes.
Place prepared pears into hot syrup and poach until tender.
Remove fruit from syrup and arrange upright in a bowl.
If the spice syrup is thin, reduce it until it thickens.
Strain the hot syrup.
Sprinkle in the saffron strand and flavor with rose water.
Pour the syrup over the pears.
Chill well before serving.
Decorate with almonds, mint leaves and silver leaf.
