Pumpkin Squares Recipe
Wanton skins filled with creamy pumpkin puree and boiled. Served with chopped tomatoes and cheese.

Ingredients of Pumpkin Squares
- 1/2 kg pumpkin
- 20 wanton skins/pasta sheets
- Paste of 2 onions
- 1 Tbsp oil
- 2 tsp chopped garlic
- 3 Tbsp cream
- 3 Tbsp grated cheese
- 2 Tbsp coriander
- Juice of 1 lemon
- Salt and pepper to taste
How to Make Pumpkin Squares

Roast pumpkin in a moderate oven until tender. Remove skin, pith and puree.

Soften onion and garlic in hot oil. Add the pumpkin puree into the pan. Cook for 5-10 minutes and season well.

Add cream, cheese, chopped coriander and lemon juice to the hot mixture.

Place a spoonful of the pumpkin mixture on half of the wanton skins.

Cover the pumpkin mixture with the remaining wanton skins and seal the edges.
6.
Cook the pumpkin squares in boiling water with a little oil for 3-4 minutes.
7.
Garnish with chopped tomatoes, coriander and cheese. Serve hot.
