An everyday Indian dish made with pumpkins, dry mango powder, chillies and sugar. Sweet and sour in one bite!

Ingredients of Sitafal Ki Subzi

  • 1 kg red pumpkin-diced
  • 1 tsp red chilly powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala powder
  • Salt to taste
  • 1/2 tsp amchoor powder
  • 1 tsp fenugreek seeds (methi dana)
  • 3 Tbsp sugar
  • 2- 3 cups of water
  • Ghee to shallow fry
  • For Garnish:
  • Fresh coriander
  • Ginger juliennes
  • Chopped green chillies

How to Make Sitafal Ki Subzi

  • 1.1. Heat ghee in a pan and crackle fenugreek seeds.
  • 2.2. Add pumpkin and cook for a minute. Now add red chillies, coriander, turmeric and salt and mix well.
  • 3.3. Add the water, cover the pan & cook over slow fire for about 10 minutes or till the vegetable is dry.
  • 4.4. Finally add amchoor powder, garam masala and sugar. Mix well.
  • 5.5. Garnish with fresh coriander, ginger juliennes and green chillies and serve.
