Ingredients of Stuffed Papad Rolls

  • 6 medium-sized papads
  • Oil for deep-frying
  • For the stuffing:
  • 4 boiled potatoes
  • 1 green capsicum, finely chopped
  • 2 green chillies, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp coriander leaves, finely chopped
  • 1 tsp chaat masala
  • 1/2 tsp cumin (jeera) powder
  • 1/2 tsp coriander (dhania) powder
  • 1/2 tsp mango powder (aamchur)
  • 1/2 tsp chilli powder
  • Salt to taste

Mash the potatoes well and combine them with the rest of the ingredients of the stuffing. Set aside

Take a big bowl of water and gently dip a papad into it for a few seconds. Remove and place on a flat surface. Pat the papad using a clean cloth to remove excess moisture.

Place 1 tbsp of the prepared aloo stuffing in the middle of this papad. Carefully fold the edges from all sides to form a sealed roll.

Repeat the process with the remaining papads. Deep fry these rolls until golden brown. Serve hot with green chutney and/ or ketchup.
