Ingredients of The Ultimate Sponge Cake
- 120 gms All Purpose Flour
- 120 gms Castor Sugar
- 40 gms Milk
- 30 gms Oil
- /2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1 tsp Vanilla Essence
- 1 tbsp White Vinegar
- 4 Egg Whites
- 4 Egg Yolks
- 1 tbsp Vinegar

First, add vinegar to egg whites. Whip egg whites till they become frothy and white.
Add sugar in three parts while whipping continuously (use electronic whisk) till they form stiff peaks.
Add whipped egg yolks to the egg whites and fold gently. Mix milk oil and vanilla extract together and whisk.
Mix flour, baking soda, baking powder and salt together and pass it through a sieve.
Add this dry mix in parts to the eggs and fold alternating with milk mix.
Line an eight-inch tin with parchment and bake it for 30 min at 180° with only lower rods on if using an oven.
Tip: Use this sponge to make layered cakes, flavoured tea cakes by adding zest like orange or lemon. To make chocolate sponge you can modify this same recipe by just replacing 30 grams of flour with coco powder.
