Fish served with greens, egg and a tangy orange sauce.

Ingredients of Tuna Nicoise Salad and Orange Sauce

  • 60 Gram Tuna or Sole fish
  • Fennel seeds
  • Salt and pepper to taste
  • 2 Tbsp Olive oil
  • For Nicoise Style Salad:
  • 2-3 Lettuce leaves
  • 5 Green beans (halved), blanched
  • 1 Small Potato, boiled
  • 1 Quail egg, boiled
  • 1 Cherry
  • 3 Black olives
  • A pinch of Lemon
  • A pinch of Olive oil
  • To taste Pepper
  • For the Orange Sauce:
  • 500 Ml Orange juice (reduced by half)
  • 250 Ml Fish stock

How to Make Tuna Nicoise Salad and Orange Sauce

  • 1.Cut the lettuce into fine strips.
  • 2.Remove the stems. Keep aside.
  • 3.Dice the tuna/sole into fillets. Put it in a bowl, add fennel seeds and olive oil.
  • 4.Now shallow fry it in a little olive oil or grill. Season with salt and pepper.
  • 5.In a separate bowl mix the potato, beans, tomatoes, black olives and cherry tomatoes.
  • 6.Now dress with lemon juice, olive oil and season with pepper.
  • 7.Place a bouquet of salad in the center of a serving plate and add the tuna/sole.
  • 8.Place the egg on the plate. Drizzle the orange sauce on top of it and serve.
