Ingredients of Vegetarian Penne Arrabiata

  • 2 cups tomato puree
  • 1 cup onion-grated
  • 1 tsp garlic paste
  • 1 tsp salt or to taste
  • 1 tsp sugar
  • 1 tsp chilli powder
  • 2 Tbsp ajwain leaves-chopped or 1 tsp dried oregano leaves
  • 2 Tbsp basil leaves-chopped
  • 2 Tbsp olive oil
  • 120 gm penne - cooked bite like
  • 1/2 cup diced and cooked mixed vegetables or sliced mushrooms
  • 2 Tbsp olives-halved
  • 1/4 cup grated cheese

How to Make Vegetarian Penne Arrabiata

Heat the oil and saute the onions and garlic till slightly colored.

Add the tomato puree and bring to a boil, and add salt, sugar, chilli powder, oregano and basil and simmer for a couple of minutes, then take it off the heat.
3.
Mix in the vegetables or mushrooms and olives, top with the cheese (or mix in if so desired).
4.
Serve and enjoy!
