The scrumptious spread boasts of different varieties of dim sums, Cantonese delicacies, exotic cocktails and world-class wines. In addition to all culinary offerings, 'The Brunch' also gives you access to pool, culinary demonstrations and cultural activities for kids. You may opt for free flowing beverage packages with international mixologist Agnieszka Rozenska. To further complement your dining experience, you would also have Jade - a band of acclaimed international artists enthralling you with their live music. Some patrons can also attend a special dim sum-making masterclass with the seasoned Chefs of Hong Kong Club. We tried our hands at making some authentic dim sums and learned a fair deal about the art:
1. We were told that for good and juicy dim sums, one should opt for chicken leg.
2. Mince, marinade and leave it overnight.
3. Some of the basic ingredients that go into standard chicken filling are salt, sugar, soy sauce, garlic, ginger and gelatine. Gelatin helps make your chicken filling juicy.
4. You can choose to steam or boil your dim sums.
5. Make sure you do not roll your dough too thin or keep it too thick.

Coming to the brunch, the mighty spread of dim sums is sure to leave you spoilt for choice. From crystal dim sums, shumai, baos, crispy fried, boiled to Shanghai-style dim sums, they have it all! We thoroughly enjoyed the prawn asparagus and crispy garlic crystal dim sums, the melt-in-mouth filling was remarkably done. The prawn shumai was also something that touched a chord with us, the chicken shumai, however, failed to impress. Bao lovers have to try their mixed mushrooms, soy and oyster sauce bao. They are shaped and dressed as real mushrooms - an absolute treat for your Instagram feed. Some other vibrant dim sums that are included in the spread are mauve coloured- cauliflower and Chinese cabbage dim sums, and bottle-green-coloured water chestnuts and garlic chives dim sums. The latter bursts in your mouth with flavours and textures incomparable. The chicken lovers are sure to like their juicy and succulent Chicken Shanghai dim sums, teeming with goodness of chicken, broth, ginger and scallions, and classic barbequed chicken bao. The crispy fried lotus root puff also makes for a delish appetiser.

Coming to salads and appetisers that added a beautiful tinge of colours to our wholesome spread, the roasted duck salad with pomello, pine nuts and shallots were sumptuous and sweet. The fried potato with chinkiang vinegar won us over for its simplistic crunch and tang. Tofu lovers will enjoy chilled tofu in picante peanut sauce.
The mains in Hong Kong Club's Sunday Brunch are a robust medley of Cantonese flavours. Unlike majority of Chinese food, Cantonese food is made with a lot of hot spices and tangy sauces, which is perhaps why many Indians harbour a fond penchant for Cantonese cuisine. In this brunch, you can please your palate with crispy string beans and Chinese olives or tofu in oyster sauce. Then among non-vegetarian options, there is cumin lamb in onion garlic in chilli paste sauce, or hot and spicy chilly chicken tossed with garlic, leeks, dry chilli and fried peanut.
The chow mien in Hong Kong Club's Sunday Brunch is eclectic and soul-stirring. The assorted dessert platter boasts of a mix of many decadent desserts like crème brulee, tipsy chocolate brownie and flavoured ice-creams.
