If you are a fan of sweets then you won't disagree that Bengali sweets stand apart from all the Indian dessert options. Unlike North-Indian options, Bengali sweets are mostly made of paneer (cheena), which makes them super indulgent. When I think of Bengali sweets, the first thing that comes to my mind is Sandesh. It is sweet, melt-in-mouth, and so delightful that you can't stop yourself after one piece. Just like any other Bengali sweet, Sandesh is also made from paneer. But since it serves as a blank canvas, you can easily tweak them as per your choice. If you like desi sweets with a twist, then we have the perfect dessert recipe for you which involves Sandesh... with fruits!

How To Make Lychee Mango Sandesh | Lychee Mango Sandesh Recipe
Chef Sneha Singh Upadhyay shared an easy recipe for lychee mango sandesh to enjoy in summer. To make this dessert, start by removing the lychee peel from the fruit. Then carefully cut it open from one side and remove its seed. Once done, keep it aside. Now take some paneer and mash it really well using your palm. Make sure it has no lumps present. Now take some mangoes and chop them. Try to remove the flesh from its seed as well.
Now add vanilla ice cream to the paneer mixture along with some kesar strands soaked in milk. Mix all the ingredients well. This would result in a beautiful orange colour. Once done, stuff the peeled lychees with some paneer mixture. After filling all the lychees, chill it in the fridge for around 30-40 minutes. After it has been chilled, arrange it on a plate and top it with some kesar milk and chopped pistachios. And enjoy!
Bonus Tip:
Instead of using vanilla ice cream in the recipe, you can replace it with sugar, sugar-free or even stevia. You can use the latter if preparing this dessert for people with diabetes.
