To make the kurkure chips, grind sabudana to make a coarse powder (not fine powder). Grate boiled potatoes and mix with sabudana powder, and season with black pepper power, sendha namak, ground peanut powder and coriander leaves. Knead lightly to make soft dough. Just roll the dough into various sticks with hands and deep fry them on low flame till they turn crispy and dark brown.
Now to make the vrat-special dhaniya chutney, simply grind together coriander leaves, green chillies, mint leaves (optional), ginger, sendha namak, jeera, curd, lemon juice and some water.
