Kadhi, a popular Indian curry made with a tangy batter or curd and besan, has been on our favourites list forever! Punjabi kadhi, Gujarati kadhi, Rajasthani kadhi, the humble kadhi undergoes slight transformations as it traverses through boundaries but its essence remains the same. The mixture of besan and curd is cooked for some time and filled with fried besan pakodas and is often topped with a scintillating tempering of spices like whole red chillies, mustard leaves and curry leaves, making it a melting pot of some strong tarty flavours. A steaming bowl of kadhi, especially paired with rice, is just what we need to liven up our Indian meal.
Since besan (gram flour) is healthy but very heavy flour, kadhi made with it may make you feel a little bottled up. Sometimes, you feel like having a light meal, which is also replete with nutrients. For all those times, you can switch to this kadhi recipe made with moong dal. Moong dal is the lightest of all dals but is very rich in nutrients like proteins.

This recipe video from YouTube channel 'Cooking With Reshu' will let you make light but equally delicious kadhi with pakodi.
Here's how you can make light and healthy moong dal kadhi:
Step 1 - Soak 1 cup moong dal for 2 hours, and then grind it to make a coarse paste.
Step 2 - Remove some of the paste and keep aside.
Step 3 - Add some water and whisk the remaining batter thoroughly.
Step 4 - Add chopped onion, chopped green chilli, coriander leaves, baking soda and salt.
Step 5 - Fry and make pakodas with the batter.
Step 6 - Now in a separate bowl, whisk some curd, add the dal paste kept aside earlier. Add water.
Step 7 - In a kadhai, fry cumin seeds, hing, garlic and add whole red chillies and turmeric powder.
Step 8 - Now add curd-dal batter and cook well while stirring regularly. Add salt and red chilli powder and mix well and cook further for half an hour.
Step 9 - Add garam masala powder and pakoda. Serve hot. Top with tempering if you want.
