This stuffed green chilli works best as a side dish but can be paired with your parathas as well. Besan (gram flour) lends a distinct nutty taste and spices of saunf (fennel seeds) and rai (mustard seeds) give pickle-like flavour to it. Here's the step-by-step recipe of besan bharwan hari mirch fry:
Step 1 - Slit all the green chillies.
Step 1- Make masala. Combine turmeric powder, Kashmiri red chilli powder, coriander powder, amchoor powder, cumin powder, saunf, mustard seeds, garam masala, salt, hing, and mix well.
Step 3 - Heat some mustard oil in a pan. Saute some besan flour till fragrant, for about 2 minutes. Turn off the gas. Combine with the masala.
Step 4 - Now fill the masala in slit chillies. Fry the chillies in hot oil on low-medium flame. Make sure not to overcook them.
Step 5 - Add the remaining masala to the chillies. Mix well. Serve hot or cold.
